Here in New York City, our St. Patrick’s Day parade is one of the largest and longest in the world with over 3 million spectators. Hot coffee is a must for me and my husband on those cold March mornings when we line up with our fellow New Yorkers and tourists from all over the world to watch the parade. 

Portable food is also a good idea, especially when it’s green, which is why I developed a special St. Patrick’s Day Shamrock Green Pistachio Muffin using ricotta cheese.  Why ricotta?

Because even though everyone is Irish on March 17, and New York owes a huge debt to its Irish immigrants, I've got Roman roots, just like St. Patrick (more on this later in the post).

As for the recipe, this sweet, soft Italian cheese is a fantastic ingredient for making tender, tasty muffins. The ricotta gives the muffins a nice substance without making them dry or heavy, so they're satisfying as well as delicious. Try them warm, right out of the oven, split open and slathered with butter or cream cheese, aahhh...

Low Fat Peach Muffins from author Cleo Coyle

These tasty muffins are packed with fresh peach flavor. Marc and I often eat them drizzled with a little honey. They are truly amazing that way. If you prefer to make them low fat, use 1% or 2% milk. For a richer tasting muffin, go with whole milk, half-and-half, or cream. The higher the fat content of your milk, the richer your peach muffins will taste.

These pistachio muffins are outstanding. The batter tastes like pistachio ice cream, but I use a secret ingredient to bring nutrition to the muffin: ricotta cheese. Ricotta adds substance without heaviness and moistness without the high calories of extra butter or oil.
