For a long time, Baileys Irish Cream was far from trendy, something "Granddad" poured into his morning cup of Joe. Not so any longer.

This wonderful product made with aged Irish Whiskey and real Irish cream (from real Irish cows) has made a delicious comeback. Many of you have told me how much you love it, and so do Marc and I...


To make Baileys Irish Coffee...

Splash a little (or a lot!) in your cup of coffee
and dollop whipped cream on top. An instant
dessert coffee with little fuss and big satisfaction. 


The array of flavors Baileys now comes in makes a simple buttercream frosting recipe (like the one I'm sharing now) even more versatile. Here are the possible flavors to get your culinary (and coffee-making) motor in gear...

Flavors include...

Baileys Original * Vanilla Cinnamon
Coffee * Espresso Creme
Chocolate * Caramel Orange Truffle * Mint Chocolate 



Cleo's Tip: We love the Vanilla Cinnamon and Original Baileys
and can highly recommend both. Unfortunately, the Chocolate Cherry,
which we did not list above didn't work for us, the flavor tasted artificial.
The other flavors sound delicious and are on our list to try in the future.


Baileys Irish Cream
Buttercream Frosting


Makes about 2 cups of icing,
enough to frost a two‑layer cake 
or 24 cupcakes

Ingredients:

1 cup (2 sticks) unsalted butter, softened

2 Tablespoons Baileys Irish Cream

1 teaspoon pure vanilla extract

3 cups confectioners’ sugar


Directions: Using an electric mixer, cream softened butter. Add Irish Cream, vanilla extract, and 1 cup confectioners' sugar. Beat until sugar is dissolved. Scrape down bowl, add 2nd cup of sugar, and beat again. Add final cup of sugar, and beat until smooth. 




If icing is stiff, add a bit more Irish Cream, beat again. Store in an airtight plastic container in your refrigerator. Or frost your cakes, cupcakes, or cookies, and eat with plenty of joy!

Here's a tip for when it needs to be non-alcoholic - like when you need to make something tasty but not make everyone tipsy - the baileys flavored coffee creamer works really well as a substitute!!! I discovered a hidden lineage to Ireland a few years ago when I discovered my maiden name was also the name of a town in Ireland and is a very Irish name in that area so as I celebrate my anniversary every March 18th I also celebrate St. Pat's day enthusiastically.     I am already receiving your newsletter and I simply adore your Coffee House and Haunted Bookshop Mysteries series. I have anxiously awaited the next installment of each! Hopefully, I will receive both this year. At 70 1/2 years old, I'm not getting any younger and I would love to be around when you decide you wish to finish both series. The "Irish Blessing" mug is absolute exquisite and I can only dream winning it.

    I am full blooded Italian and have been helping my mother bake Italian lemon cookies since I could reach the counter. We never called them "Anginetti" however. Mom has been gone for 2 years now but I still make them for my children along with biscotti. However, the lemon are their favorites. Now the grandchildren are helping me. It's nice to see we have something in common.

    You know I subscribe to the newsletter, as well as am a friend on FB (but I NEVER go on FB. . . Lol). I would love to win this mug, besides the fact that it is gorgeous, that poem was my grandmothers favorite, she had copies of it all over her house, and having that on my morning mug would be a lovely way to remember her daily.   115. I am a big, big fan of the Coffeehouse Mysteries! I've become a better coffee drinker exploring beans, pots, and accompanying treats. With St. Patrick's Day tomorrow, I plan to "whiskey-up" my coffee, or at least add a little Bailey's Irish Cream. With all these wonderful things associated with Ireland...why didn't they take over the world? I guess they do "one day a year!"
