Insanely Easy Cherry Streusel Coffee Cake for Mother's Day from Cleo Coyle

Print Friendly and PDF

With three generations of women featured in our Coffeehouse Mysteries, we often hear from mothers who pass our books to their daughters, as well as their own mothers, mothers-in-law, and grandmothers. To celebrate the many generations of women who read our books, my husband and I are delighted to wish our readers a Happy Mother's Day!

In honor of the day, I am also sharing this insanely easy Cherry Streusel Coffee Cake, slightly adapted from a recipe that came to me from a Coffeehouse Mystery reader, as well as a mother and grandmother, named Shirley Jackson. May you bake with love and eat with joy! ~ Cleo

Insanely Easy Cherry Streusel
Coffee Cake

As I mentioned, this recipe came to me from a beautiful Coffeehouse Mystery reader. I've adapted it slightly, writing my own directions, tips, and notes.

Thank you to Shirley Jackson. I know she would join me in wishing you boundless joy in baking, eating, and living! ~ Cleo

Note from Shirley: "I made this coffee cake for the first time in Houston for a group of Red Hat friends. This coffee cake tastes just like a yeast bread that has taken you a long time to make. Sure does make your kitchen smell cozy."

Note from Cleo: Shirley is absolutely right about the yeast and the coziness of this coffee cake. Over the years, I've seen many cake recipes with a cake mix as starter. I've seen many "pie-filling-over-cake-mix" recipes, too. But I've never seen yeast used as an ingredient. The use of yeast in this recipe gives the streusel a sweet bread-like flavor and texture, but without kneading or rising time. It's also fantastic chilled, so it makes a great summer cake, too.

Cherry Streusel
Coffee Cake

Ingredients:

For the dough base:
1 package yellow cake mix
1 cup all-purpose flour, unsifted
1 packet (1/4 ounce) dry yeast
2/3 cup very warm tap water
2 large eggs, whisked with fork

For the topping:

5 Tablespoons butter (salted is fine)

1 can (1 pound 5 ounce) cherry pie filling
2 Tablespoons granulated sugar

Step 1 - Make dough base: First preheat your oven to 375° Fahrenheit and coat a 13 x 9 x 2-inch baking pan with cooking spray (or grease and flour it to prevent sticking). Then, into a large mixing bowl, measure out 1-1/2 cups of the dry cake mix. (You are setting aside the remaining mix, which you will use for the topping.)

Add the flour and dry yeast to the bowl. Now add the 2/3rds cup of very warm tap water. Allow the yeast to come alive and bubble for a minute. Finally, add the 2 eggs. Beat everything for 2 minutes at medium speed, scraping bowl often. Dough will be thick. Using a rubber spatula or back of a spoon, spread it across the bottom of your coated baking pan.

Step 2 - Make streusel topping: Melt butter in a saucepan and pour it over the remaining cake mix. Mix the butter in well with the dry mix. It should be lumpy and crumbly. (See photo.)

Step 3 - Assemble coffee cake: Spoon the cherry pie filling evenly across the top of the dough in the baking pan. Sprinkle sugar on top of the filling. Finally, using your fingers, crumble the streusel topping over it all. NOTE: Because there was so much topping, I held back some of mine so the bright redness of the cherries would show through, making a prettier presentation.

Step 4 - Bake and glaze: Bake the coffee cake for 30 minutes in your preheated oven (375° F). Cool the coffee cake on a rack--to allow air to circulate under the hot pan bottom. When the top is cool, drizzle with glaze. See my Quick Glaze recipe below. After cake is served, refrigerate leftovers to keep fresh. This cake is also delicious chilled!

CLEO'S FAVORITE QUICK GLAZE

Cleo's note: Shirley's cherry streusel coffee cake glaze used corn syrup, water, and powdered sugar. With her indulgence, I am giving you my favorite butter glaze instead, which is what I use when I make this cake. Here is the simple recipe...

Ingredients:

2 Tablespoons butter (salted is fine)
2 Tablespoons whole milk    (cream or half-and-half)
1 cup confectioner's    (powdered or icing) sugar, sifted

Directions: Over medium heat, warm butter and milk in a saucepan. Do not let this mixture brown, burn, or boil or you will have a scalded taste in your glaze. As soon as butter has melted, whisk in the sifted confectioner's sugar, a little at a time, until it is completely melted. You must work with the glaze quickly, while it is still warm. Using a rubber spatula or spoon, drizzle the warm glaze over the coffee cake. If the glaze hardens up on you, place the saucepan over the heat again and whisk until liquefied and smooth once more.

  9. My mom was known both for her cooking and her cleaning, but there is one meal none of us will ever forget. As we sat down to feast on mom's delicious lamb chop suey, it was immediately apparent that something was wrong with the flavor. Suddenly, mom burst out laughing. She had used the same pan the night before to boil eggs, so when she started the chop suey, she just emptied out the water and started cooking--having totally forgotten she'd added Joy dishwashing liquid to the water in the pan the night before. We still laugh whenever one of us brings up mom's "Joy-ful Lamb Chop Suey"! Thanks for the contest and the memory. --TeaS

I was just starting to have a real relationship with my mother (she was an alcoholic for 18 years of my life starting when I was 12) so to this day, I miss what could have been. But this led me to ensure I have a great relationship with my daughter so she has good memories of me and no regrets. Kuzl

  19. My Mom was the best Mom ever. I lost her in 2012 and miss her everyday. A favorite memory of mine as a kid was bath night, clean jammies, clean sheets, then she'd blow between my toes to "get the lint out." which never really was there after a bath, but she knew I loved it. She also every night read me a story and sang songs. She was awesome!! How I miss her.

The moves when we were transferred *she counted that when my dad had retired and they bought their house we had moved 32 times), taking care of everything when my dad was stationed in Japan and deployed to Vietnam. She also taught me that no matter what you can always make time to read. She bought me my first Nancy Drew books. So my mom has taught me a lot but also gave me thee love of reading. vlhc

This is silly, but one of my favorite memories of my Mother is on picnics. In the 50s not everyone had a car and my Dad would take ours to work. Occasionally, Mother would pack a picnic lunch (peanut butter sandwiches) grab a blanket and take us on a a picnic. She always made a big to-do with us helping her get ready. My 2 brothers and I always found it exciting. We would then traipse to the farthest tree in the backyard, put out our blanket, spread out our food, settle down to have our Kool-aid and peanut butter.

  28. When I was a child, I thought my Mom never slept. "Back in the day" before automatic clothes washers, Mom was up hours before the rest of the family . . . beginning laundry and preparing breakfast and lunches "to go". When I was bathed and put to bed, Mom was still awake and working. She had the grace and fortitude of Madame and I am reminded of Mom when you write of Madame's classic charm, wisdom, and humor.

  29. I come from a family of 5 children, me being the youngest and only girl. I never understood who she was or why she was the way she was. She was always tired. She was very moody. She had health issues and seemed to always have a headache. My mom passed away the same year my eldest son was born. Now that I have children (3 boys), I can now understand her moods, why she was so tired and why she always had headaches. I wish she were here so I could tell her how much I love her and admire her. I wish she were here to share our stories. I wish she were here so I could give her a big hug and tell her what an amazing mom she was! I love you, Mom!

My mom is 96 and doing pretty well, considering. I bring books for her to read, almost always mysteries. I've gotten her hooked on various shows on pbs such as Downton Abbey, Grantchester, Doc Martin, and so forth. Frequently after one episode airs she'll give me a call so we can hash it out. 49. Tonight my mom and I made dinner for the family. When we all sat down together, about to take those first mouthfuls, mom said, "How nice that we can all sit down and enjoy a family meal, we're all here together." To which my (now 5 year old, and the only granddaughter) daughter replied, "Accept my [great] grandma. She isn't here at the table, but she's here with us."
This made me think about motherhood as a kind of legacy. Mom create family legacies by sharing with their children. Generations of moms sharing moments, sharing memories keeping their moms and families alive through generations. My grandma continues to cook with me: she's having tea with me, as I pour from her kettle, and she's helping me choose our meals, as I search through her cookbooks. Happy Mother's Day to all the mom's past, present, and future!

  90. My mother passed away 16 years ago and I miss her every day. As a child she would sing "You are my sunshine" to the little ones. Luckily she did get a break between the six of us. She then went on to the grandchildren and great-grandchildren. I sang it to my kids and grandkids. My oldest granddaughter (12) is called Sunshine by just me and we put sunflowers on our texts. A great way to keep my mom in the heart of us all. bobn

  91. ptcl- My memory of my mother was not a good one as she was never home that is how i ended up in a foster home. My dad took me to the police station and told them he worked nights at a bar and that my mother was a woman of the night then started my nightmare of many years. Then at 12 my wonderful grandma showed up and started taking me every weekend and it was just great. She took me to nice dinners and i got to watch tv with her. Then at 16 came home from school one day and there was no foster home so i called my grandma to come and get us right away so she took me and my foster sister. My grandmother taught me all about womanhood and everything . She took me to Minn to introduce me to my great grand ma before she passed at 102 yrs and she was great. When i had my own kids she retired from the Hyatt House and she watched my kids and loved it . Then my daughter had a daughter and i moved to Iowa and my grandma watched her great great granddaughter. I called my grandma every night to make sure she was ok and that all was well, One day she called me and told me that she and her husband were going to mcdonalds and that they wouldn't be home for my 8 o'clock call i said ok i love you she said the same,.The next call i got was from a hospital that my 100 year old grandma had fallen and she had a brain bleed and they weren;t going to operate that is the day everything went black. I flew to Ca and all the kids came to see her and she passed. She was everything to me I loved her so much and she was just my best friend and now she is with her mom. I don't celebrate holidays much as my kids are in Ca and i am in Ia also i am disabled so the cooking is me telling my husband how to do something or i try to do it. The day grandma died so did my happiness!

  93. mwer - My grandmother and I always had our "thing" when I was younger and I long for those days. We would have a sleepover at her house Saturday night and in the morning, we'd get up and go to her Hungarian Church. After mass, we would walk downstairs into the hall and start setting up for Bingo. We'd make sandwiches, set up prizes, and chat and laugh with all of the other ladies that quickly became my friends. It was our day.

  94. jlath - My mom was my biggest cheerleader. One of my favorite memories of her is the day I decided to put color on my hair. I chose a shade slighter lighter than my natural color and mom helped me with the process. She liked the way it looked and decided to try it on her hair too. The problem was my mom's hair was darker than mine and after applying the color the finished product was a ghastly shade of red!! My dad came home about the time we took the towel off her hair. He did NOT like the final product and she had to call her hairdresser and get her to "fix" her color. We laughed about that event for years. I loved her all the more for it!

  99. Elai - My mom works so hard and always has. We lived on a grain farm. The fields need to be worked. Mom did a lot of that before we kids were old enough to drive tractor. One very hot summer day she came home and said she forgot her water bottle and was just about ready to drink the has out of the gas can. She wanted us to learn to fish, my dad wasn't interested in that at all, so she took us. But we weren't patient enough. We just "fell" in and went swimming instead. One year for Easter she had us make grass nests instead of having Easter baskets. That was a very special Easter. So many great memories! I love my mom!

The other was how very different the love I feel as a parent is from all other loves I've experienced, and I've loved and continue to love a lot of people.

  110. The radiation schedule had been fulfilled and we just finished the 5th chemo treatment. As usual, we made our trek to the San Jose Mall where we would stand and stare at the beautiful caramel and candy apples in the display case of the specialty shop. One day, when she felt like it I would buy her one ~ the biggest brightest red candy apple they had!

On the last day of treatment, she did not have the strength to go to the mall, so I took her home. The quilt and pillows were waiting her arrival, I put the coffee on and joined her on the couch. She apologized for not being able to visit the the 'candy apple store' ~ as she laid her head in my lap, I knew at that moment the roles had reversed.

I was now my Mother's keeper.

She was only 53 when she passed (26 years ago this October) ~ there has not been a day that I don't think of her, wish I could pick up the phone and call her, share stories of how beautiful her granddaughter grew up to be and that she has 3 gorgeous grandsons.

Her memory lives through my stories, pictures, recipes and of course we can never have a candy apple without toasting "Grandma Mary".

Thanks for the opportunity to enter your contest. I've just recently started receiving your newsletters and look forward to reading your mysteries.

My favorite thoughts about motherhood go right along with with quote: "If I knew having a grandchild was so wonderful, I would have done that first." I give thanks for the parents(my 5 children and their spouse') of my grandchildren (5 girls 4 boys ages 17 to 1 year) for the best gift a mom could have. I look at my children and how they have developed a meaningful life and the loving and responsible way they take care of their children and think, it was all worth it. I also take the time to love and spoil the grandchildren, when we see them. We are all in the same state, or will be soon, however all but two are two hours or more away.
Please enter me in your contest, I love drinking coffee, and now that I have time, I love reading, especially mysteries! Janet

I remember as a little girl my mom would almost always have cookies waiting for kids when we got home from school to have along with a piece of fruit for a snack. Most of the time the cookies were recipes from one of the grandmas. I also remember both Grandmas coming over in the fall to help my mom can all the veggies from the garden and them telling me that I will need to know this when I am a grown up so I can do it myself. I now can my own applesauce thanks to them.

  141. My mother loves sweets. She's a terrific baker (especially of pies!) and somehow manages to keep track of everyone's favorite baked good. Whenever we go to visit her, we makes bets on how many different kinds of treats she'll have waiting for us. And if anyone gets a craving while we're there, we know that *whatever* it is, Mom will be able to make it. As someone who grew up in an isolated rural area, she has an enormous, wonderfully stocked pantry filled with every sort of tasty ingredient (and her own home-canned and frozen produce).
My mom taught me to be ready for anything and to face whatever happens with a cup of coffee in one hand, a treat in the other--and a big smile on my face! (I think she and Clare would get along great.)

Funny, how that is, considering the days that I thought would never end when I believed that I was handling motherhood somehow all wrong. Then their teens came and they confirmed that I was correct in that I was failing motherhood. Shockingly, they have progressed past their teens now and assure me that all of the studies show that my actions and decisions as a mother have proven most effective in parenting and teaching them to be adults. Who knew?

  163. My mom sews. I think she has always been the only person in the neighborhood with a sewing machine that is regularly used. She mends clothes and hearts for neighbors and friends, and her quilts warm all of us on cold winter nights. I hope I can continue to nurture our widening circle of family, friends, and neighbors as she has always done!

  167. I am blessed to be a mother to a very special little girl. I'm learning as much as she is. I love watching her grow. My mother taught me how to put my child above myself.

  169. I lost my mother a year and a half ago to breast cancer. While going through her things, I found many recipe cards that had been her mother's recipes (in my grandmother's handwriting). One of them is very similar to this and I remember my Great Aunt making it for family reunions as well. Thank you for giving me the key to that cherished memory. I can't wait to make it......as soon as I am done with my own treatment for breast cancer.

My Mother started her motherhood journey a bit later than most of her time. This was due to WWII which she participated in while defending her home country of England. She met my Dad after the war ended & they emigrated to Canada. Mom is 96 this year & is truly a remarkable lady. Still sharp & energetic. She is an inspiration to all she meets. Her wealth of experiences during her life time would sustain any evening of story telling. AND her favourite genre is Mystery! Combine that with her schooling at the Cordon Bleu School of cooking & you have created a sublime resonance. We both enjoy your books so much. Relaxing with a cup of coffee, reading by the window with the sunshine pouring in, what is better than this. Thank you.

  171. It has been over 16 years since my Mom went to heaven, and I can hear her voice in my memories of her all the time. My Mom was a fabulous cook, not just a cook, but a wonderful baker. Her Mom, in the early 1900's went to a cooking and baking school and she taught my Mother so much about pastry especially. I didn't even realize until I was at least ten that not all mother's made all of their own homemade bread, rolls, donuts, and all pastries. My mother cooked and baked everything you can think of and she taught my two sisters and me to know how to do everything as well. We all love to cook and bake to this day, (although going out to dinner holds a big appeal in my older years), and there is not much that we have not made or at least tried to make. We didn't have some of Mom's recipes, so for years we have tried to replicate a few things that she made that I guess we didn't pay strict attention to when she was showing us how to make it or we would know the ingredients now. It was a wonderful time to bond with our Mom; that is most likely what made all of this time together in the kitchen so wonderful and rewarding. I have been so blessed, as both of my sisters have been, to have been taught something that we never realized as a young girl how important it would be for the rest of our lives and how happy it has made our families and many friends. I can remember asking for particular cookbooks for my birthday and Christmas as I loved to read them at night. That was before cozy mysteries of course!!!!!
Thank you for the chance to tell you a little of my Mom and how her teaching three daughters about food has meant so much to all of us over the years.
If only we had paid strict attention to how a certain white cooked fudge came to be one of the things we all wish we could make now, with the same flavor as my Mom and Grandmother had made. We Cynthia - ceblain

  172. Though my mother passed eight years ago, I feel her touch in the kitchen (yes, Mom, I mastered your famous lasagna and Easter ham pies
as well as when I feel your approval when I make a change in the home I grew up in, and smell your Nina Ricci cologne when I've echoed your words and wisdom. Thank you for giving me strength, courage, and a sense of style. ❤

  173. My mom died when she was only 61, back in 1986. Fortunately she got to be with both of my boys (her only grandkids) for a few years. She could cook just about anything and make it taste great, which was a bonus as money was kind of tight when I was a kid. She and my dad never turned away any of our friends who were hungry or needed a place to stay. nazk

  174. I am almost 70 years old and am fortunate to still have my mom. She is an amazing woman with more energy than I will ever possess. Mom is not only a wonderful cook (she still makes her own bread and everything is still from scratch), but a fabulous gardener and she still travels by herself!!! She is my best friend. shar

  175. Rist. I just got to share my time as a Girl Scout leader with my mother who for many years was my own leader. My girls and I were on a trip to an escape room to Escape to Cadettes. We got to the room early and had time to burn. My mother lives just across the street. We walked over and she quickly pulled out pictures of me and her scouting together. My girls giggled and loved seeing me as a young Girl Scout. There were smiles all around. I'll remember always this special time.
