How to Make a Virgin Sangria and Amuse Your Cat by Author Cleo Coyle

Print Friendly and PDF

That cute little cat (photo-boming my foodie pic) is Durango, one of our many rescued New York Strays. In this post, you will find out how he turned a peach into a beach ball, while I turned one into a tasty drink.

🍑  If you're feeling hot under the collar these days, you are not alone. We have at least one solution for you: a wonderfully refreshing and hydrating recipe. It's also a great way to use extra fruit in your fridge that may be getting a little too ripe.

Why virgin? A white wine sangria is delicious, but on a workday, I prefer that my fingers hit my laptop keyboard rather than my forehead, which means no firewater until the day is done.

A virgin sangria is also a good idea for households with kids because it can be converted into an adult beverage at the time it's poured, which means one pitcher can conveniently serve drinkers and non-drinkers alike.

Light Peach Muffins from author Cleo Coyle

Print Friendly and PDF

These tasty muffins are packed with fresh peach flavor. Marc and I often eat them drizzled with a little honey. They are truly amazing that way. If you prefer to make them lower in fat, use 1% or 2% milk. For a richer tasting muffin, go with whole milk, half-and-half, or cream. The higher the fat content of your milk, the richer your peach muffins will taste.

Either way, bring out that local, raw honey (the best tasting and best for you), put on a pot of coffee or tea, slip a pan of these babies in the oven, and get ready to eat with joy! ~ Cleo

Easy Italian Honey-Glazed Peach Crostata with Fresh Ginger Whipped Cream from Cleo Coyle

Print Friendly and PDF

A crostata is an Italian dessert tart, usually made with jam or fruit. This is my easy version of a rustic, free-form crostata with a healthful, shimmering filling of honey-glazed peaches. I make this crostata every year in late summer when ripe peaches are plentiful.
